Herby Vegan Bread
This is a recipe that I used to make with milk and butter but have swapped to soya milk and oil and it's just as good. I wish I could link you to the smell, it's gorgeous. A great way of using early summer herbs.

  1. 1 cup of warm soya milk
  2. 1/2 Tbsp of oil
  3. 2 Tbsp of agave or maple syrup
  4. 1 Tbsp each of chopped fresh marjoram, dill and sage
  5. 1/2 tsp of ground cloves
  6. 1/2 Tbsp of salt
  7. 1 Tbsp walnut oil
  8. 1/2 Tbsp of dried yeast
  9. 3 Tbsp warm water
  10. 2 cups of rye flour
  11. 2 cups of whole wheat flour
  12. More flour to knead
  1. Mix all the herbs, oil, syrup and salt into the milk
  2. Mix the yeast and water together
  3. Mix all ingredients together and knead for 5 minutes
  4. Leave to rise in an oiled bowl until doubled in size
  5. Punch down and knead again and leave to rise again
  6. Punch down and shape into a loaf
  7. Leave to rise
  8. Cook in an oven on 200°C for about 40 minutes
  1. This is a really fragrant loaf, moist like a cake and quite substantial.
