Roasted Sweet Potato, Kale & Chilli Soup
A hearty, warming soup, ideal for winter evenings by the fire.

  1. 3 or 4 sweet potatoes
  2. 2 or 3 stalks of celery, chopped
  3. 1 large onion, red or white, chopped
  4. A handful of chopped kale
  5. 1 dried chille, chopped
  6. 500ml stock
  1. Peel the sweet potato and cut into large chunks
  2. Toss in a bit of olive oil and roast for 20 minutes at 180°C
  3. Soften the onion & celery in the soup pan in a little oil
  4. Add the sweet potato, chilli and stock
  5. Simmer for about 15 minutes
  6. Blend
  7. Serve with chunky bread and a nice fresh green salad
